BLUE BAY CRABCAKES


1 lb blue crab meat
2 slcs white bread, crusts removed and crumbled
2 tbs mayonnaise
2 tsp Old Bay Seasoning
2 tsp fresh Parsley, chopped
1/2 tsp prepared yellow mustard
1/2 cup clarified butter

Directions:
In a large bowl, mix:
- Bread, mayonnaise, Old Bay, parsley, mustard and until well blended
- Gently stir in crabmeat
- Heat butter in pan
- Scoop out crab mixture, drop in pan
- Flip once browned, flatten cake
- Remove once both sides browned
- Serve with classic tartar sauce


DUNGENESS CRABCAKES

1 lb Dungeness Crab meat
1 cup mayonnaise
2 tbs chives, chopped
2 tbs parsley, chopped
2 tbs chervil, chopped
1 tbs fresh lemon juice
pinch of salt
pinch ofcayenne
1 1/2 cup panko breadcrumbs
5 tbs clarified butter

Directions:

In a large bowl, mix: mayonnaise, chives, parsley, chervil, lemon juice, salt, cayenne until well blended
- Gently stir in crabmeat
- Scoop out crabmeat, drop in bowl of panko crumbs
- Cover crabmeat with crumbs
- Heat butter in pan
- Drop panko covered crab into pan
- Flip once browned, flatten cake
- Remove once both sides browned
- Serve with a chipotle avocado sauce

PIT BEEF SANDWICHES

2 tsp kosher salt
1 1/2 tsp black pepper
1 tbs onion powder
1 tbs garlic powder
1 tbs smoked paprika
1/2 tbs oregano
2 tsp chili powder
2-3 lb beef top round, cut in 2 equal pieces
1 onion, thinly sliced
16 Mini Kaiser Rolls

Directions
- prepare rub by combining: salt, pepper, onion powder, garlic powder, smoked paprika, oregano, chili powder
- sprinkle onto meat and massage into sides, cover and refrigerate for 24-48 hours
- Heat grill to medium high
- grill for 6-8 minutes each side
- let rest then slice as thin as possible
- pile beef on buns, add onions and any desired sauce

MISSION STYLE BURRITOS

Mission style burritos are huge and overstuffed. For a party make smaller versions and stuff a medium tortilla with any variety of the following:

- Fried Rice
- Beans, black or pinto, whole or refried
- Some kind of meat, usually carne asada or al pastor
- Onions, finely chopped
- Cilantro, finely chopped
- Salsa
- Jalapenos
- Sour Cream
- Guacamole

Wrap in tinfoil.

CHESAPEAKE BAY SHOOTERS

Bloody Mary Mix

40 oz Vodka
6 L Tomato Juice
1 oz Worcestershire Sauce
4 Chili Peppers
2 Lemons sliced
1 tbs Old Bay Spice

- In a large punch jug, combine all ingredients & stir
- Add one freshly shucked oyster to glass
- Top with Bloody Mary mix

BALTIMORE BERGER COOKIES

COOKIES

1 cup unsalted butter
1 1/2 tsp salt
2 tsp vanilla extract
1 tbs baking powder
1 1/2 cup sugar
3 large eggs
4 1/2 cup unbleached all-purpose flour
1 cup milk

ICING
3 1/2 cup semi-sweet chocolate chips
4 oz unsweetened baking chocolate
2 tbs light corn syrup
4 tbs unsalted butter
1½ cup heavy cream

Directions:
Preheat the oven to 400°F
Lightly grease (or line with parchment) two baking sheets.

COOKIES
- In a large mixing bowl, cream together:
- butter, salt, vanilla, and baking powder.
- Beat in: sugar, then the eggs, one at a time, beating well after each addition.
- Add flour to the wet ingredients alternately with the milk, beginning and ending with the flour (do this gently; there’s no need to beat the batter).
- Drop the dough onto the prepared cookie sheets.
- Flatten each mound of dough to a circle about 3" across, form into football shapes
- Leave 2" to 2 1/2" between each cookie, for expansion
- Bake the cookies for about 11 minutes, until they are brown on the bottom (carefully tilt one up to look), but not colored on top. These cookies are supposed to be soft and cake-like, don’t over-bake them.
- Cool the cookies on the pan for 5 minutes, then transfer them to a rack to cool completely.

ICING
- Into a saucepan place:
- Chocolate chips, baking chocolate, corn syrup, butter, and cream.
- Heat the mixture till it’s very hot; the cream will start to form bubbles.
- Remove from the heat, and stir until smooth.
- Let cool to room temperature; this will take at least a couple of hours
- When completely cool, beat with an electric mixer for 6 to 7 minutes, until the icing lightens in color just a bit, and thickens just slightly.
- Spread each cookie with a generous 3 tablespoons icing, leave ¼" bare around the outside edge of each cookie.
- Allow to set
