Canadian celebrity chef Chuck Hughes is a big believer in real food. He cooks up a kid-friendly Mushroom and Cheese Florentine that's full of real food taste and good nutrition for your family.

Mushroom & Cheese Florentine

  • 1 slice thick country bread
  • 1 Tbsp Hellmann's Light Mayonnaise
  • 1 cup fresh spinach
  • 1/2 cup mushrooms, sliced or chopped
  • 1/2 cup mild shredded yellow and white cheddar
  • 1/2 tomato
  • 3 basil leaves, chopped
  • 1 Tbsp olive oil
  • Salt and pepper to taste

Sautée mushrooms and spinach with a drizzle of olive oil. Drain to remove the excess liquid.

Spread mayonnaise on bread, pile on spinach and mushrooms and top off with cheese. Broil in an oven for three minutes, or until the cheese is melted.

Dice up the tomato and add in the olive oil, salt and pepper and chopped basil leaves. Mix everything together and top the sandwich.

For a regular sandwich version, just add an additional tablespoon of Hellmann's Light Mayonnaise and top with another slice of bread.

Serves 1.
