July 9, 2010: Grilled lamb chops and balsamic grilled zucchini

Ingredients:
- 30 Pcs Lamb Chops
- 8 Oz. Olive Oil
- 4 Oz. Red Wine Vinegar
- 3 Cloves Garlic - Finely Chopped
- 2 Stalks Rosemary - Washed And Picked
Directions:
1. Mix all the ingredients except the Lamb together.
2. Marinade the lamb in the mixture overnight.
3. Remove from the marinade, let drain, season with salt and pepper.
4. Grill over low to medium heat until desired doneness is reached, about 5 Min. for medium rare.
5. Remove from the heat, let rest for 2 min. before serving.
Balsamic Grilled Zucchini
Serves 6 as a side dish
Ingredients:
- 3pcs green zucchini
- 3pcs yellow zucchini
- 2tbl grapseed oil (or vegetable oil)
- 2tbl good olive oil
- 2tbl aged balsamic vinegar
- 2tbl fresh thyme- washed, picked and chopped
- 1tsp +/- fresh ground black pepper
- 2tsp +/- kosher salt
Directions:
1. Cut tops and bottoms off the zucchini to remove the woody nibs
2. Slice lengthwise in half, then each half again to make 4 long pie shaped segments
3. Place the skin side of each ¼ piece of zucchini on the cutting board
4. The seeds will be in the top piece of each of these strips
5. Turn your knife parallel to the cutting board and drag your knife horizontally along the length of the zucchini, cutting away the seeds
6. Place all the pieces of de-seeded zucchini in a bowl
7. Mix all the other ingredients in a separate bowl and mix well
8. Pour marinade over the vegetables and let marinade for 15 minutes, tossing a few times
9. Remove from marinade, let drain for a couple minutes
10. Cook over medium heat on pre-heated barbeque, removing from the heat when still a bit tough
11. Cut into more manageable size pieces, drizzle with a bit of very good olive oil, check seasoning and serve!
